Date night in: Valentine's edition, part 3


I love breakfast foods, and one of my all-time favorites is french toast.  If you're like me, breakfast is great at anytime of the day.  Therefore, you can prepare this delicious dish as breakfast-in-bed for your honey, or save it for dinner like I did.

So, with no further ado...

Cinnamon Raisin French Toast with Cream Cheese Topping


French Toast Ingredients:
non-stick cooking spray
8 slices cinnamon raisin bread
3 eggs
2/3 c milk
1/4 tsp vanilla extract
1/4 tsp cinnamon

Topping Ingredients:
4 oz cream cheese, softened
1/4 c plain yogurt
1/4 tsp vanilla extract
1/4 tsp allspice
1 tsp cinnamon
3 tbsp powdered sugar

Optional:
butter
maple syrup
cinnamon sugar
extra powdered sugar


In a medium-sized bowl, mix cream cheese and yogurt (I use a hand-held mixer) until texture is even.  Add vanilla extract, allspice, cinnamon, and powdered sugar, and mix until an even consistency is reached.  Refrigerate.

Coat skillet with non-stick cooking spray, and preheat over medium heat.  Whisk eggs, milk, vanilla extract, and cinnamon in medium-sized bowl.  When skillet is thoroughly heated, dip each slice of bread in mixture, coating on both sides, but not soaking.  Cook for about one minute on each side and carefully flip.  Repeat process until bread is browned on both sides.

I spread a little butter on each slice and stack them, sprinkle with powdered sugar and cinnamon sugar, and drizzle a little bit of maple syrup.  Customize each of these things to your taste.

Put a large dollop of cream cheese topping on stack, and serve.  Yum!

Tip: You can use the leftover topping to dip apples and other fruits in.  It tastes delicious!
